- Take 2 tsp Sesame Oil

- Wash and cut the Brinjal and put it into a water bowl.
- In a kadai, add oil. Once oil gets heat, add mustard seeds, fenugreek and asafoetida. Fry it.
- Add shallots and curry leaves. Saute till shallots becomes translucent.
- Add tomatoes and brinjal, saute in medium flame for 5 mins.
- Add tamarind extract, garlic, turmeric powder, sambar powder and salt. Let it boil.
- Meanwhile add grated coconut and cumin seeds in a mixie. Grind to a smooth paste by adding water gradually.
- Add the ground paste in the curry. Then add required water. Cover and cook for 15 mins in medium flame.
- Garnish with coriander leaves. Mix well. Transfer to a bowl.
- Now it's ready to serve. Serve with hot rice, idli and dosa.
