- Prepare 1/2 kg Karelay
- Use 4 to 5 Sliced Onions medium size
- You need 4-5 Tomatoes
- Get 1 and half tbsp Ginger garlic paste
- Provide 1 tbsp Red chilli powder
- Prepare half tsp Turmeric powder
- Use 1 tbsp Coriander powder
- Get 1 tsp Cumin seeds

- Get 3-4 Green chillies
- Use 5 to 6 Curry leaves
Steps to make Karelay Pyaz:
- Deseeded & Slice Karelay and add some salt on it. And leave it for half and hour.
- Now wash it thoroughly and keep it in a strainer so all the excess water will be strained.
- Now deep fry these until they becomes Crispy.
- Now take 4 sliced onions and deep fry them until they becomes golden.
- In another pot take 1 sliced onion and 2 to 3 tbsp of oil and fry it till golden brown.
- Now put cumin seeds and curry leaved in it, saute for 1 min.
- Now add ginger garlic paste and fry until you can smell it's aroma.
- Now add tomatoes along with red chilli powder, turmeric powder, coriander powder and salt, mix it well and cover the lid. Let tomatoes becomes tender.
- Now bhunofy it until it's water dries up and oil seperated.
- Now add fried onions and again bhunofy it.
- In last add fried bitter gourd in give it a quick stir and add green chillies.
- Cover the lid and let it sit for 5 mins. & Now it's ready to serve with garma garam Chapati or Naan.
