  3. Prepare 20 g Garlic
  4. You need 20 g Ginger
  5. Take 3 pc Red Chillies
  6. Provide 4 pc Dried Chillies (rehydrate, deseeded)
  7. Take 1-2 Tbsp Fermented Shrimp Paste (Belacan)
  8. Take 3 pc Candle Nuts
  9. Prepare 3 tsp Coriander Powder
  10. Provide 1 tsp Cumin
  11. Provide 1 cup Stock (chicken,vegetable or fish)
  12. You need 1 cup Coconut Milk
  13. You need 1 stick Lemongrass (bruised)
  14. Prepare 1 sprig Curry Leaves
  15. Get 1 pc Ginger Flower (Bunga Kantan, sliced middle)
  16. Provide 2 pc Tamarind Slices (Asam Keping)
  17. You need 1 Tbsp Palm Sugar
  18. Take as needed Salt
  19. Use 3 Tbsp Cooking Oil
  20. Get For Final Dish;
  21. Use 200 g Rice Vermicelli or Yellow Noodles (any will do)

  23. Take as needed Water (for boiling noodles)

  26. Prepare 50 g French Beans (cut lengthwise)

Instructions to make Nyonya Curry Noodles:
  1. CURRY PASTE; Blend the shallots, garlic, ginger, red chillies, rehydrated dried chillies, coriander powder, cumin powder, fermented shrimp paste and candle nuts into a paste.
  2. COOK THE PASTE; heat the cooking oil in a pot/wok until hot and fry the curry paste until the oil separates. (If you want to add meat, this is when you add it too.)
  3. MAKE GRAVY; add in stock, coconut milk, lemongrass, ginger flower, curry leaves, tamarind slices, palm sugar and mix well. Cook until the gravy is reduced by half. Season with salt.
  4. PREP THE NOODLES; While the curry is cooking, cook the noodles in pot of boiling water until soft. Lift, strain the excess water and add a 1 Tbsp of Cooking Oil to prevent sticking.
  5. ASSEMBLY; when ready to serve, cook the fishballs, fried tofu, french beans in the curry for 3 - 5 minutes. Place noodles in a bowl or soup plate and top it with cabbages. Then pour the curry onto the noodles and arrange the fishballs, tofu and vegetables. Ready to serve.
  6. NOTE; if you want to add prawns, fried fish, fried chicken - anything within reason really - by all means.
