The ingredients needed to prepare Khara bhendakaya:
- Use 1/4 kg ladyfinger
- Take 4 springs curry leaves
- Prepare 1 cup peanuts
- Use 4 red chillies
- Get 2 tbsp oil
- Prepare 1 tsp turmeric powder
- Prepare To taste salt
- Use 1 tbsp Dhaniyalu /coriander seeds
- Provide 1 tbsp minapagundlu/ black gram
- Prepare 1 tsp jeera/cumin seeds
- Use 1 tsp avalu/mustard seeds
- Provide 1 pinch menthulu/fenugreek
- Provide 5 garlic cloves
Instructions to make Khara bhendakaya:
- Cut lady's finger Into even sized pieces, put a closed slit on one side of each piece.
- Heat kadai with oil.
- Add lady's finger, turmeric, salt,2 sprigs of curry leaves, 1 red chilli. Cook for 10-15 minutes. Stir in between.
- Heat another kadai. Add peanuts. Add 3 red chillies. After 2 minutes add dhaniyalu and minapalu. Cook for 2 minutes.
- Add cumin, mustard seeds, Fenugreek, 2 sprigs of curry leaf. Cook for 2 minutes or until done. Let it cool.
- Taste lady's finger to see if it's cooked and salt adequacy. Turn off flame. Let it cool.
- Once the spices mixture is cool enough, mixie it until it's soft. Add garlic. Mixie it again.
- Once the lady's finger cools, stuff the spice mixture into the slits.
- Ready to serve.
