The ingredients needed to make Kaju curry:
- Provide 15-20 cashew nuts
- Prepare 100 gm cashew nuts
- Use 1 medium onion roughly chopped
- Provide 4 medium tomatoes roughly chopped
- Prepare 2 green chillies roughly chopped
- Prepare 1 bayleaf
- You need 1 tsp ginger paste
- Prepare 1 tsp garlic paste
- Use 1 tsp red chilli powder
- Provide 1 tsp garam masala powder
- Provide 1 tsp kasturi methi
- Get 1 tsp fresh cream
- Use To taste salt
- Take 1/4 tsp sugar
- Provide 2 tsp oil /ghee
Steps to make Kaju curry:
- Mix onion, tomatoes, cashew nuts and ½ cup of water in pan and cook on medium flame for 6-7 minutes. Let it cool completely.
- Add green chilies to cashew nuts mixture and grind to fine paste.
- Heat oil/ghee in pan add cashew nuts saute on slow flame till crispy. Remove and keep aside,
- In same oil/ghee add bayleaf, saute for 30 seconds, now add ginger and garlic paste saute for 1 minute. Add gravy saute for 2 minutes, now add red chilli powder, garam masala powder, kasuri methi and salt mix well and cook for 1 minute.
- Now add fresh cream and ½ cup of water mix well and cook for 2 minutes, now add fried cashew nuts and sugar mix and stir for 1 minute. Serve hot with paratha/naan/rice.
