- Next add the spice paste and cook for 10minutes. Then add in the coconut milk and the 1/2 cup of water, the chile powder and give it a quick stir
- As it starts to boil, add the cut pieces of cod fillet, season with salt, reduce the heat to low, cover the pot with a lid and let it cook
- Remove from the heat and slowly transfer the fish curry to a serving dish, make sure the fillets don't fall apart! Garnish with freshly chopped coriander leaves
- Serve hot with some freshly steamed white rice
