- Get 1/4 tsp turmeric powder

- Prepare 1 tsp cumin seeds
- Take pinch hing
- Get 3-4 tbsp oil
Steps to make Spinach and pumpkin curry:
- In a deep pan add spinach leaves along with a small roughly chopped onion.add 1 cup of water and cook for 4-5 mins.strain and keep aside to cool slightly then blend coarsely.(not fine paste).
- In a blender jar add garlic cloves, onion and ginger and blend coarsely.
- In a pan add heat oil add cumin seeds,red dry chilli,hing.add coarsely ground onion garlic and ginger.stir until light pink.add turmeric powder, coriander powder and red chilli powder.saute for few secs.
- Add finely chopped tomatoes,green chilli and salt. cover it and cook for 2 mins until tomatoes gets soft.
- Add coarsely blended spinach and saute well.cook for 4 -5 mins.on low flame until oil comes on surface.(add little water according to desired consistency while cooking.)
- Meanwhile in a pan stir fry pumpkin until soft.
- Add stir fried pumpkin in spinach gravy and cook for 2 mins.add garam masala, cover it and switch off the heat.
- Spinach pumpkin curry is ready to serve.serve with roti or chapati.
