The ingredients needed to make Kadhi Pakora – Punjabi & Spicy:
- Get For Dumplings (pakoras)
- Take 0.5 Cup Split Bengal Gram Flour (Besan)
- Prepare 6-7 tbsp Water
- Take 1/2 tsp Salt
- Take 1/4 tsp Asafoetida (Hing)
- You need 1/2 tsp Red Chilli Powder
- Use 1/2 tsp Cumin Seeds
- You need 1/2 inch Ginger Fresh/ Grated
- Use 1 Onion Small
- You need 1 Green Chilli
- Get 1/2 cup Oil For Frying
- You need For Kadhi
- You need 1 Cup Curd or Yogurt
- Get 2 Cups Water
- Provide 1 tsp Turmeric Powder
- You need 1 tsp Red Chilli Powder
- Take 1.5 tbsp Ghee (use 1/2 tbsp for tempering)
- Get 1/4 tsp Asafoetida
- Prepare 1/4 tsp Mustard Seeds
- Take 1/4 tsp Cumin Seeds
- Take 3 Dry Red Chilis Break into half. Use one for tempering
- Take To taste Salt
- Get 1 Sprig Curry Leaves
- Get 2 Green Chilis
- Take 1/4 tsp Fenugreek Seeds (Optional)
Steps to make Kadhi Pakora – Punjabi & Spicy:
- Mix split Bengal gram flour with water and make a thick batter. - Add all the ingredients to the batter and mix well.
- Once the batter has rested, make small balls with the batter and fry till they are golden brown.
- Make a slurry with yogurt (curds), red chilli powder, turmeric powder & water.
- Heat oil in a thick bottomed cooking pot and add mustard seeds, fenugreek seeds, cumin seeds, dried red chilis and curry leaves. Fry till fragrant.
- Add the slurry to the cooking pot and stir continuously till it thickens. Add sliced green chillies. This is when it is called a “Kadhi”. Boil it for 4 minutes.
- Add pakoras to the kadhi and boil for another 5 minutes so that they soak up the kadhi.
- Heat ghee in a tempering ladle and add one broken red chilli and half a teaspoon of mustard seeds.
- Your Spicy Punjabi Kadhi Pakoda is ready.
