The ingredients needed to cook Handvo:
  1. Use 1 1/2 cup rice
  2. Get 1/2 cup tuar dal
  3. You need 1/2 cup moong dal
  4. Provide 1/2 cup urad dal
  5. You need 1/4 cup chana dal
  6. Take 3 tbsp curd
  7. You need 3 green chilies
  8. Provide 7-8 garlic cloves
  9. Get 1 inch ginger
  10. Get 4 tbsp Sesame seeds
  11. You need 3 tbsp jeera(cumin) seeds
  12. Get 2 tbsp Ajwain (Carom seeds)
  13. You need to taste Salt
  14. Take 1/2 cup Oil
  15. You need 2 tbsp saunf( fennel seeds)
  16. Take 1/2 tsp turmeric powder
  17. You need to taste Red chilli powder
  18. Get to taste Sugar
  19. Use 1 pinch hing/asafoetida
  20. Get 1 tsp curry leaves
  21. Get 1 Lauki ( bottle gourd)grated
Instructions to make Handvo:
  1. Soak rice and all the daals for 6 hours
  2. After 6 hours grind that mix with ginger garlic and chilli
  3. Add curd to the mixture and leave it covered for 6 hours or overnight
  4. Now the mixture will be fermented, add some sesame seeds, sauf, jeera, ajwain, salt turmeric powder, half tbsp sugar and red chilli powder and grated Lauki
  5. Heat a Kadhai with half cup or 7/8 tbsp oil, add mustard seeds, jeera, hing, sauf, curry leaves. Pour the mixture to this and cover it. Cook for 20 minutes, check with a knife if cooked flip it around and cook from the other side for next 15 minutes to make it crispy.
