- Prepare 2 cup basmati rice or long grain rice
- Get 4 cup water
- Use 2 tbsp oil
- Get 2 tsp dark mustard seeds

- You need 2 tsp curry leaves, thinly sliced

- Boil water in a pot with some salt. Then add the washed rice. Cook until done. It can take around 10-15 minutes. After that strain the rice with the help of a colander.
- In a wok, heat oil on medium heat. Add the mustard seeds.
- Once the seeds crackle, add dried red chillies. Fry for a few seconds.
- Add turmeric powder and cook for a minute or until it's raw smell goes away.
- Then add the chopped curry leaves, cook for another minute.
- Add the rice and give it a nice mix. But be gentle as the rice can break.
- Lower the heat, add salt, lemon juice and lemon zest. Mix again. Remove from heat.
- Garnish the rice with fresh coriander leaves and lemon slices.
