  3. Prepare 1 medium size capsicum

Instructions to make Veg tehri:
  1. 1st wash and cut the veggies into cube shape and keep aside. Now in a pressure cooker heat 4 tbsp of oil/ ghee/ butter. Into it add cumin seeds, bay leaves and cardamom.
  2. Now when the cumin seeds starts to splutter add all veggies (except capsicum if not it will over cooked.) saute it for 2-3 mins then put chopped ginger and chillies to it again fry it in a high flame to 5 mins. slow down the flame, then add all powder Masalas one by one into the veggies, saute it for 3-4 min let the spices get well set with the veggies
  3. Add tomatoes, capsicum and salt (as per taste) into it.
  4. Wash One cup of rice, (here I have taken Scented Basmati rice) drain it and add to the veggie mixture give a stir and add 2 cups of water (double water according to the rice). close the lid. In a medium flame cook till one whistle remove from gas keep aside. Mean while fry the paneer with some salt and pepper and keep aside.
  5. Open the lid of the pressure cooker add 1 tbsp ghee (optional) put the fried paneer give a stir keep aside. Your Veg Tehri is ready to serve now. enjoy it with onionRaita or plain curd.
