The ingredients needed to make Potato and Tomato Curry:
- Use 2 Potatoes (Peel & cut into small cubes)
- Prepare 2 Tomatoes (Blend in a Blender)
- Take As required Salt
- Prepare 1/2 tsp Mustard Seeds
- Get 1/2 tsp Cumin Seeds
- Prepare 1 pinch Asafoetida
- You need 2 Long Green Chillies
- Take 1 Sprig Curry Leaves
- Provide 1 tsp Kitchen King Masala
- Take 1/2 tsp Kashmiri Paprika Powder
- You need 1 tsp Coriander Powder
- You need 1/2 tsp Cumin Powder
- You need 1/4 tsp Turmeric Powder
- Prepare 1 Green Bell Pepper (cut into small cubes)
- Use 1 tbsp Coriander Leaves (For Garnish)
- Use 1 tsp Lemon Juice
- Use As required Hot Water
- You need 3 tbsp Til Oil / sesame oil
Instructions to make Potato and Tomato Curry:
- Blend the tomatoes in a blender and set aside. In a pan, heat til oil. Add green bell pepper cubes and stir fry for 2 minutes on medium high heat. Remove and keep aside.
- In the same pan, add more til oil. Add mustard seeds, cumin seeds and asafoetida. Allow the seeds to splutter.
- Add green chillies and curry leaves and saute for a minute.
- Add turmeric powder, cumin powder, kitchen king masala, chilli powder and coriander powder and saute for a minute.
- To this add potatoes and hot water and let it come to a boil. Cover with lid and cook till potatoes are cooked. (Alternatively, you can cook it in a pressure cooker)
- Add the stir fried green bell peppers, coriander leaves and lemon juice and saute for a minute.
- Garnish again with coriander leaves and green chillies
- Relish it either with Rotis, Puris, Rice etc
