- You need 4-5 medium bitter gourd
- Prepare as per taste Salt
- Take 1 tbsp Red chilli powder
- Provide 1 tbsp Seasame seeds powder
- Prepare 1 tbsp Groundnut powder
- Use 2-3 Tamarind soaked
- You need 1 tbsp Jaggery
- Provide 1/2 tbsp Turmeric powder
- Take 1/2 tbsp Jeera / cumin
- Provide 1/2 tbsp Coriander seeds
- Provide pinch Asafoetida or hing powder
- Take 1 tbsp Garam masala
- Take Preparation
- Use Soak 2-3 tamarind in hot or warm water for atleast 15 minutes
Steps to make Karlyachi bhaji(bitter gourd curry):
- Cut bitter gourd in thin round slices and apply salt over it and leave it for 4-5 hours or overnight. This way it will release water and the bitterness will reduce to some extent.
- Fry the bitter gourd slices. It should turn reddish and look crispy.
- Remove this from the kadai and then remove extra oil and make tadka with coriander seeds, jeera, turmeric powder and hing and again add bitter gourd slices in it.
- Stir fry for a minute and then add groundnut powder and seasame seeds powder. Add tamarind pulp and jaggery into it.
- Add garam masala, red chilli powder. Add less or no salt as per your taste as we have already coated slices with salt before. Add 2 cups water.
- Cover and let cook for 4-5 minutes.
- Remove the cover and let water evaporate bit as per your gravy requirements.
- The curry is ready. 😃 As we have fried it before, it tastes delicious and is still crunchy even after cooking. Serve with roti or rice.
