- Use 500 gm raw mango
- Prepare 200 gm jaggery
- Provide 1 cup water
- Prepare 1/2 tsp cumin seeds

- Use 1/4 tsp mustard seeds
- Prepare 8-10 curry leaves, chopped

- Provide 1/2 tsp garam masala
- Use 2 tbsp oil
Instructions to make Mango Launji:
- Wash, (peel/unpeeled)and cut the raw mangoes into pieces.(I haven't peeled to keep the mango pieces intact.
- Fry the cumin, methi and fennel seeds in slow flame. Grind to powder when,cool down.
- Chop the jaggery into small pieces.
- Heat the oil. Splutter mustard seeds in hot oil. Add the curry leaves.
- Add the chopped mangoes and mix well with oil mix.
- Add both the salt and turmeric powder and red chilli powder and coat well with the mangoes.
- Cook for two minutes, covered. Then add 1 cup water. Mix the jaggery and cook covered,till mangoes are softened.
