- You need 500 gm Diced Chicken Breast
- Prepare 100 gm Red Lentils (Soaked 2hrs)
- Get 3 cloves garlic (finely chopped)
- You need 1 Birdseye Chilli (finely chopped)
- Use 1 thumbsize piece of Ginger (finely chopped)
- Get 1 tsp Cumin, Coriander, Cumin, Tumeric
- Use 2 tsp Garam Masala
- Provide 2 Bay Leaves
- Get 1 (400 gm) tin chopped Tomatoes
- You need 1 Red Onion (roughly chopped)
- Prepare 2 large handfuls of Spinach
- Prepare 1 Handful chopped Coriander
- Use Juice & Zest of 1 Lime
- Use 3 tbsp Natural Yoghurt
- Prepare 2 tsp coconut oil
- Take S&P (season)

- Season the chicken & brown in a hot pan for 3 minutes with 1 tsp of the coconut oil & then set aside
- Turn to a medium heat & cook the onion in the remaining oil for 5 mins till soft. Add Garlic, Chilli, Ginger & spices & cook for 2 mins
- Increase the heat & add the tomatoes & 1 can of water. Bring to the boil & add the lentils.
- Simmer for 30 mins then add the chicken & cook for 5 mins. Add spinach & cook for a further 5 mins.
- Add 3 tbsp of natural yogurt to a bowl & add the lime & Coriander. Mix well. Season the Curry & serve
