- Prepare 2 cups Semolina dry roasted
- Prepare 1 Tomato chopped large
- Prepare 1 tbsp Ginger paste
- Use 1 tbsp Lemon juice

- Prepare 1 tsp Turmeric powder
- Prepare 8-10 pieces Cashew nuts cut into halves
- Get 1 sprig Curry leaves
- Prepare 1/2 tsp Mustard seeds
- Prepare 3/4 tsp Cumin seeds
- Take 1/2 cup Peas
- Prepare 1 tbsp Ghee
- You need 1/2 cup Carrot finely chopped
- Use 2 pieces Green chilli slitted
- Take 3/4 tsp Onion finely chopped
- Take to taste Sugar
- You need 4 tbsp Refined Oil
- You need 1/2 cup French beans finely chopped
- Prepare 1/2 cup Cauliflower florets chopped
Steps to make Sukha Upma:
- Heat oil in a karai. Temper with mustard,cumin seeds, green chilli slitted, curry leaves and let them splutter. Add ginger paste and saute for 3-4 mins until the raw smell goes away.
- Add the cashew nuts and fry till it appear golden. Now add al the vegetables-onion, carrot, french beans, peas, cauliflower, tomato and mix well. Saute on medium flame for 5 mins. Add salt. Cover and cook till all the vegetables softens.
- Open the lid. Check for the doneness of the vegetables. Add turmeric powder, slight sugar and mix well. Then add the dry roasted semolina and give it a quick mix.
- Now sprinkle a dash of water. Mix it. Cover and cook for 2 mins. Open the lid. Check for the doneness of the semolina. Repeat this process until the semolina is completely cooked and turn soft. It will take 3-4 times but the upma should remain completely dry. So the trick is sprinkle little water-cover and cook.
- Once the semolina is completely cooked, add lemon juice, ghee and mix well. Serve hot.
