The ingredients needed to prepare Vegetable Sagu:
- You need Spice paste -
- Prepare 1 inch cinnamon
- Prepare 2 cloves
- You need 2 cardamom
- You need 15 black peppercorns
- You need 1 tbsp whole coriander
- You need 1 teaspoon human
- You need 1 tbsp roasted chana dal
- Get 4 cloves garlic
- Prepare 1/2 teaspoon ginger paste
- Take 2 green chillies
- Prepare 2 tbsp coriander leaves
- Take 1/2 cup grated coconut
- Take For curry -
- You need 4 tbsp oil
- Take 1 teaspoon mustard seeds
- Use 1 teaspoon udad daal
- Provide 2 dry Red Chillies
- Prepare 8-10 curry leaves
- Prepare 1/2 teaspoon hing/ asafoetida
- Get 1 onion
- You need 1/2 teaspoon turmeric
- Prepare 1 tomato
- Prepare 2 cups mixed vegetables (potato, green peas, cauliflower, carrot green beans)
- Get as per taste Salt
Steps to make Vegetable Sagu:
- Take all the ingredients for paste in a mixer jar and add half cup of water. Make a paste out of it. Clean and prepare all the vegetables for the curry.
- Heat oil in a pan and add mustard seeds. When it crackles, add udad daal, red chilli pieces, curry leaves and hing. Now add chopped onion, turmeric and mix everything well. When onion becomes pink in colour, add chopped tomato to it. Cook it for two minutes and add all the vegetables to it.
- Now add one cup of water and cover and cook the vegetables until 80% done. Now add prepared spice paste and mix everything well. Cover it again and cook it until the oil separates from the curry and all the vegetables are cooked. It will take around 8 to 10 minutes.
- Serve mix vegetable sagu with dosa, puri, paratha or rice.
