  2. Use 2 Tbsp Coconut Oil
  3. Take 1/2 Tsp Mustard Seeds

  10. Prepare 1/2 Tbsp Garlic Paste
  11. Provide 1/2 Tbsp Ginger Paste

  13. Provide 3/4 Tbsp Coriander Powder
  14. You need 1 Tsp Blackpepper powder
  15. Prepare 1/2 Tsp Fennel Seeds Powder

Steps to make Malabar Egg Curry:
  1. Hard boil the eggs, open the shell, and slice the eggs into 2 halves.
  2. In a pan, add 2 Tbsp of coconut oil, add mustard seeds allow it to crackle. Now add in curry leaves and broken dried chillies, chopped green chillies and saute for a minute.
  3. Add ginger garlic paste and saute till the hint of raw smell vanishes.
  4. Now add in finely chopped 1/2 cup of onion and continue to saute till it looks light golden brown.
  5. Finely chop or roughly process 1 large tomato and add this into the onion mixture. Mix well everything and allow tomatoes to get cooked.
  6. Now add all the spices, mix well and saute for 2 minutes.
  7. Add 1 1/2 cup of thin coconut milk,mix well such that everything blends well together.
  8. Keep the flame on medium heat, add salt and bring it boil.
  9. Add in boiled eggs, gently mix everything such that masala coats eggs.
  10. Close lid and keep in simmer for about 10 minutes.
  11. Now add Thick coconut milk and continue to cook in simmer till you reach the desired consistency.
  12. Serve it with Appam, Puttu, Pathiri or even with Roti or steamed rice.
