Steps to make Roast chicken (whole):
- Start preparing the chicken a day before. Unfreeze the chicken and keep in turmeric and lime juice mixed lukewarm water for about 45 mins.Clean the inside and the skin.
- Mix the seasoning ingredients and apply evenly between the skin and meat. Refregerate it covered for over a night.
- Unfreeze the chicken and pre heat oven to 400f for 5mins.
- If you intend to keep the skin, then apply some of the pre roast mix inside the skin.Otherwise remove the skin and put some deep cuts in meaty areas of the bird(breast/thighs).
- Apply some of the mixture of pre-roasting coat on the chicken(male sure that the mixture gen in to the inside and cuts).
- Poke the lemon with a fork and insert it in to the chicken belly and tie the legs(If you use stuffing replace lemon with it) and kep the bird on the baking tray and roast it for 45-50 mins. Reapply the mixture every 20mins.Don't forget to toss the garlic bulbs to the tray.
