- Crack three eggs in a big bowl.

- Now heat oil in non stick frying pan… Spread egg..cook one side…
- Wen cooked one side.. Start to fold the omelet..

- Cut the potato in cubes. Wash them.
- Heat oil in heavy bottom pan… Add potato pieces. Fry them till light brown.
- Now add garlic n onion paste.. Saute them for two min.. Add ginger paste . Tomato puree.. Add all dry ingredients..except garam masala.. Stir continuously…
- Wen all spices starts to release oil… Add two cups of water. Cover the lid. Cook for ten minutes.
- Now open the lid. Check potato become soft.. Then add omelet pieces.. Cook for two minutes without lid.
- Now take out.. Off the fire.. Sprinkle garam masala n garnish with cilantro.
- Serve with hot steamed rice..
