The ingredients needed to cook Aloo gobhi:
  1. Provide 1/2 kg cauliflower
  2. Get 2 potatoes
  3. Provide 2 onions
  4. Use 2 tomatoes
  5. Take 100 gram green peas
  6. Use 1/2 Inch Ginger
  7. You need 5 Garlic cloves
  8. Use 1 spring curry leaves
  9. Get to taste rock salt
  10. Prepare 1 tsp Red Chilli powder
  11. Use 1/2 tsp Turmeric powder
  12. Use 1/2 tbsp kasuri methi/ dried fenugreek
  13. Get 1/2 tsp coriander powder
  14. Provide 1/2 tsp Jeera/cumin seeds
  15. Provide 1/2 tsp Avalu/Mustard seeds
  16. Prepare as needed Coriander leaves
  17. You need 1 tsp Garam masala
  18. Provide 2 tbsp oil
Instructions to make Aloo gobhi:
  1. Cut cauliflower. Soak it in water with salt for 15 minutes.
  2. Cut onions and potatoes.
  3. Cut tomatoes.
  4. Make ginger garlic paste.
  5. Heat kadai with oil. Add jeera, mustard seeds. Add onions, Ginger garlic paste, curry leaves. Cook on low flame for 5 minutes or until thr onions become translucent.
  6. Add tomatoes and rock salt. Cook until the oil seeps out of tomatoes.
  7. Add turmeric and chilli powder.
  8. Add potatoes and green peas. Cook for a minute.
  9. Add cauliflower. Mix it. Cook it for 15 minutes until the oil seeps out and both the potatoes and cauliflower are cooked (taste test).
  10. Add coriander powder and dried fenugreek powder. Cook for a minute.
  11. Add garam masala and coriander and let it cook for another 2 minutes. Serve.
