  1. First let's make coconut milk - Blend the finely chopped fresh coconut pieces with some water. Add 1 cup water and blend till the coconut is grounded well. - ● Pour it in a bowl lined with a thin muslin or fine strainer. The milk will be strained. Press with a spoon on the coconut shreds to get the Thick & creamy coconut milk. - ● Put back the coconut shreds in the blender again. Add 2 cups water and blend again. Again strain in a different bowl. Press with a spoon. This is the Thin coconut milk.
  2. In a large pan, heat coconut oil and saute mustard seeds, jeera, cloves, whole black peppercorns, cinnamon, bay leaf and cardamom.
  3. Add sliced onion, and saute till they become translucent. Then add chopped beans, carrot, potato, peas, cauliflower florets, green chilli and ginger. Add salt and black pepper powder too & saute for 2 mins.
  4. Furthermore, add 1 cup water and few curry leaves. Mix well.
  5. Cover and boil for 5 minutes or till vegetables are half cooked.
  6. Now add 2 cup Thin Coconut Milk and mix well.
  7. Boil for 6-7 minutes or till vegetables is cooked completely but not mushy.
  8. Turn off the flame and add ¼ cup Thick Coconut Milk mix well. Garnish with chopped coriander leaves.
  9. Serve Hot with Appam, dosa, plain Akki Roti or Rice.
