  1. Get For Dumplings (pakoras)
  2. Take 0.5 Cup Split Bengal Gram Flour (Besan)
  3. Prepare 6-7 tbsp Water
  4. Take 1/2 tsp Salt
  5. Take 1/4 tsp Asafoetida (Hing)
  6. You need 1/2 tsp Red Chilli Powder
  7. Use 1/2 tsp Cumin Seeds
  8. You need 1/2 inch Ginger Fresh/ Grated
  9. Use 1 Onion Small
  10. You need 1 Green Chilli
  11. Get 1/2 cup Oil For Frying
  12. You need For Kadhi
  13. You need 1 Cup Curd or Yogurt
  14. Get 2 Cups Water
  15. Provide 1 tsp Turmeric Powder
  16. You need 1 tsp Red Chilli Powder
  17. Take 1.5 tbsp Ghee (use 1/2 tbsp for tempering)
  18. Get 1/4 tsp Asafoetida
  19. Prepare 1/4 tsp Mustard Seeds
  20. Take 1/4 tsp Cumin Seeds
  21. Take 3 Dry Red Chilis Break into half. Use one for tempering
  22. Take To taste Salt
  23. Get 1 Sprig Curry Leaves
  24. Get 2 Green Chilis
  25. Take 1/4 tsp Fenugreek Seeds (Optional)
Steps to make Kadhi Pakora – Punjabi & Spicy:
  1. Mix split Bengal gram flour with water and make a thick batter. - Add all the ingredients to the batter and mix well.
  2. Once the batter has rested, make small balls with the batter and fry till they are golden brown.
  3. Make a slurry with yogurt (curds), red chilli powder, turmeric powder & water.
  4. Heat oil in a thick bottomed cooking pot and add mustard seeds, fenugreek seeds, cumin seeds, dried red chilis and curry leaves. Fry till fragrant.
  5. Add the slurry to the cooking pot and stir continuously till it thickens. Add sliced green chillies. This is when it is called a “Kadhi”. Boil it for 4 minutes.
  6. Add pakoras to the kadhi and boil for another 5 minutes so that they soak up the kadhi.
  7. Heat ghee in a tempering ladle and add one broken red chilli and half a teaspoon of mustard seeds.
  8. Your Spicy Punjabi Kadhi Pakoda is ready.
