  2. You need 3/4 cup Cauliflower
  3. Use 1-1/2 cup Carrot..

  7. Take 5 Green chillies chopped
  8. Use 4 . Potatoes medium (boiled, peeled & mashed)
  9. Get 1 tsp Red Chilli Powder
  10. Prepare 1 cup Breadcrumbs
  11. Provide as needed Oil for deep frying.
  12. Get FOR GRAVY….
  13. Use 4 tbsp Oil
  14. Provide 2 tbsp Ginger , finely chopped.
  15. Use 2 Green cardamons
  16. Get 2 tsp Cumin seeds
  17. Take 200 grm, Bottle gourd peeled, cut in to cubes & boiled.
  18. Use to taste. Salt
  19. Use 2 tbsp Coriander powder
  20. Prepare 1/2 tsp Cumin powder
  21. Use 1 cup Fresh coriander leaves chopped
  22. Get 2 tbsp Butter
  23. Provide 1" sticks Cinnamon
  24. Provide 1 cup Fresh cream
  25. Get 10 Black peppercorns
  26. Provide 200 gm Red pumpkin, peeled, cut in to cubes & boiled.
  27. Provide 15 Ceshew nuts roasted
  28. You need 2 tsp Red Chilli Powder.
  29. Prepare 1/2 tsp Turmeric powder
  30. Use 1 tsp Garam masala powder ,
  31. Prepare 1/2 cup . Fresh mint leaves
  32. You need 1 cup Tomato puree
Instructions to make Vegetable (mix) kofta curry..:
    1. In a bowl add mixed vegetables, boild crushed potato, chopped green chillies, chopped ginger, red chilly powder & salt to taste. Mix well & make a dough. Make a small equal balls, give round shape like koftas.
    1. Heat oil in a pan & fry these koftas. Keep aside.
    1. In a grinder add this mixture & make a fine paste adding little water. Strained through strainer. Keep aside.
    1. Heat oil in a pan add cinnamon, green cardamoms, black peppercorns & cumin fry till fragrant. Add red pumpkin, bottle gourd, roasted cashew nuts red chilly powder, cumin powder, turmeric powder & garam masala powder & saute. Add fresh coriander leaves & mint leaves, mix well. Cook for 1 mnt. Cool it.
    1. In a serving dish add gravy & koftas. Serve hot
    1. Heat butter in a pan add add tomato puree cook for sometime. Add paste, boiled & cook on medium heat for 2-3 add salt to taste & saute. Add fresh cream, mix well.
